Spring Solutions #9: Turkey Tetrazzini

Turkey Tetrazzini


2 servings leftover Creamy Turkey Tenderloin, chopped (see recipe link in directions)

1 cup leftover Creamy Turkey Tenderloin sauce (see recipe link in directions)

2 cups cooked pasta (such as egg noddles, rotini, penne, bowtie)

½ cup shredded Cheddar cheese, optional

½ cup plain panko bread crumbs

1 tablespoon butter, melted

This recipe is made from leftovers from main dish recipe: Creamy Turkey Tenderloin.

Preheat oven to 375°F. In medium bowl, combine chopped turkey, sauce, pasta and cheese. Divide between 2 greased (16 ounce) individual casserole dishes.
Toss bread crumbs with butter. Sprinkle over pasta.

Bake 15 minutes or until bubbly and golden brown.

Makes 2 servings.
Work lunch suggestion: Prepare steps 1 and 2 in microwave-safe individual casserole dishes. Refrigerate up to 2 days. Microwave on HIGH 2-3 minutes, stirring occasionally, or until hot.
