Winter Solutions #19: Honey Pork on a Stick

Made some Magic Pork (see recipe below) today so made this recipe with some of it and then froze the rest in 2 cup bags for meals later on.  We cooked the sauce separate and then threw some cubed pork in the sauce to heat back up…served over rice…OH MY YUMMINESS!!  Enjoy!

Honey Pork on a Stick (this recipe is part of our Family Favs Meal Solutions Kit)

1½ pounds boneless pork loin
½ cup Honey Teriyaki Sauce
¼ cup orange juice
2 tablespoons olive oil
2 tablespoons honey
1½ tablespoons Garlic Garlic™ Seasoning
6-8 wooden skewers, soaked in water 30 minutes

Season pork with salt and pepper as desired. Place in a gallon freezer bag. In small bowl, whisk together next 5 ingredients; salt and pepper as desired. Pour over pork. Seal well; toss to coat. Refrigerate several hours or up to overnight.
Prepare grill to medium heat. Remove pork from marinade and thread on skewers. Transfer marinade to a small saucepan. Bring to a boil over medium-high heat. Boil 5 minutes. Reserve 1 tablespoon for remix recipe, if desired.
Place pork skewers on grill. Grill, turning occasionally, until internal temperature reaches 155°F on an instant-read food thermometer, about 8-10 minutes, basting with marinade last 5 minutes.
Makes 6 servings. Or 4 servings + 2 leftover servings.

Serve with Garlic Grilled Zucchini.

Make Ahead & Freeze: Prepare step 1. Seal well, label and freeze. Thaw completely. Continue with step 2.

For remix Sticky Pork Tacos recipe: Remove 2 servings leftover pork from skewers and place in a storage container. Place reserved marinade in a separate storage container. Refrigerate up to 2 days.

Magic Pork:
4 pounds boneless pork tenderloin
2 cups water or chicken broth
4 tablespoons Onion Onion™ Seasoning
2 teaspoons Garlic Garlic™ Seasoning
1 teaspoon Seasoned Salt

Place the pork in your slow cooker; add remaining ingredients.
Cook on LOW 6-8 hours (or 30 minutes in the electric pressure cooker)
Cube the pork and  Package in 1 quart freezer bags, about 2 cups of pork per pack.
Makes about 8 cups.
