Spring Summer #26…Roasted Onion Turkey Tenderloin Salad

You might be saying …”those are weird looking turkey tenderloins” and you would be absolutely correct…My Hubby really does not like turkey except during the holidays so I totally revamped the recipe…we used pork chops and I marinated them overnight in everything then grilled for about 6-8 mins on each side…our side was sliced potatoes with green tea peppercorn seasoning (about 1 to 2 t per potato), butter (about 1 T per potato) and bacon (1 T per potato)  wrapped in foil and tossed on the grill to cook…everything was delicious!!

Roasted Onion Turkey Tenderloin Salad (see comments for Kimber Style)

1½ lbs. boneless skinless turkey tenderloins
½ cup beer or cola
¼ cup Roasted Onion Burger Starter **
1 Tbsp. Green Tea Peppercorn Seasoning **
16 oz. bag salad greens
Salad toppings (such as green beans and cherry tomatoes) and dressing of your choice

Serve tonight: Combine first 4 ingredients in a gallon resealable freezer bag; seal. Place bag in a shallow dish and refrigerate 30 minutes or up to overnight.

Preheat grill to medium. Remove tenderloins from bag; discard bag with marinade. Place tenderloins on coolest part of grill. Grill, turning once, until internal temperature reaches 165°, about 15-20 minutes.

Remove from grill; slice tenderloin and serve over a bed of lettuce with your favorite toppings and dressing. Makes 6 servings.

Serve with garlic breadsticks.

Freeze for later: Combine first 4 ingredients in a gallon resealable freezer bag. Seal well, label and freeze. Thaw completely. Prepare as directed above.

¼ cup grated Parmesan cheese, divided
3 Tbsp. Avocado Oil **
6 thin ham slices
1 cup shredded mozzarella cheese
1/3 cup sour cream
3 Tbsp. milk
1 packet Lemon Dill Cheese Ball Mix **
Fresh sage leaves (optional)
