Winter Meal Solutions #28..Merlot & Mushroom Shredded Beef Sandwiches

I forgot to grab a picture of our sandwiches…amazing!!!  loved that they were not the same old BBQ sandwiches…I used Onion Onion instead of sliced onions…and pork roast instead of beef chuck roast

Merlot & Mushroom Shredded Beef Sandwiches

2 lbs. beef chuck roast
1 Tbsp. Sea Salt & Herb Seasoning (not ground)
1 medium onion, sliced
8 oz. pkg. sliced fresh button mushrooms
Merlot & Mushroom Slow Cooker Sauce
10-12 hamburger buns
10-12 slices provolone cheese

Rub roast with Sea Salt & Herb Seasoning. Place in a 3-quart or larger slow cooker. Top with onions, mushrooms and Merlot & Mushroom Slow Cooker Sauce. Cook on low 6-8 hours or until beef is fork tender and shreds easily. Shred beef and place back in sauce. Serve beef on buns with cheese slices. Makes 6-8 servings.
Make ahead & freeze
Place seasoned roast and onions in a gallon resealable freezer bag. Label and freeze. Thaw and prepare as directed above.

6 oz. pkg. portobello mushrooms, thinly sliced
1 tsp. Garlic Pepper Seasoning , divided
1½ lbs. lean ground beef
1 Tbsp. Ultimate Steak™ Seasoning
1 Tbsp. Worcestershire sauce
½ cup chopped onion
6 slices Swiss cheese, folded in half
½ cup mayonnaise
3 Tbsp. Aged Balsamic Vinegar of Modena
6 crusty buns
2 cups baby spinach
