Winter Solutions #15…Tuscan Pork Roast

This was definitely a good one…house smelled amazing all day as it was cooking in the slow cooker…Ii used 2 T Onion Onion instead of sliced onions and diced tomatoes instead of crushed…very very good!!!

Tuscan Pork Roast

2 lbs. pork shoulder roast
1 medium onion, sliced
8 oz. pkg. sliced fresh button mushrooms (optional)
1 packet Tuscan Chicken Slow Cooker Sauce Mix
15 oz. can crushed tomatoes
Cooked mashed potatoes
Place pork roast in a 3-quart or larger slow cooker. Add onions and mushrooms, if desired. Combine Tuscan Chicken Slow Cooker Sauce Mix and tomatoes; pour over roast. Cook on low 6-8 hours or until pork is fork tender. Break apart and serve over mashed potatoes with cooking sauce. Makes 6 servings.
Make ahead & freeze
Combine Tuscan Chicken Slow Cooker Sauce Mix and tomatoes in a gallon resealable freezer bag. Add pork and onions (not mushrooms). Label and freeze. Thaw and prepare as directed above, adding mushrooms.

1-2 Tbsp. Ultimate Steak™ Seasoning
1 (14-16 oz.) bag lettuce blend
2 medium tomatoes, diced
1 small red onion, diced
1 red bell pepper, thinly sliced
1 large cucumber, sliced
¾ cup crumbled feat or blue cheese (optional)
