Winter Meal Solutions #5…Turkey Barley Stroganoff

OH MY GOSH…Why have I not cooked with pearl barley before??? We love it and this recipe was so delicious and easy…all in the crockpot…served with a green salad and all done!  We used Chicken instead of turkey and didn’t have any green onions so just left them out…definitely a keeper!!  I made half the recipe and was perfect for the 2 of us …Hubby had seconds or we would of had leftovers 🙂

Turkey Barley Stroganoff

32 oz. carton chicken broth
1¼ lbs. boneless turkey breast tenderloins, cubed
8 oz. pkg. fresh sliced button mushrooms
1 cup uncooked pearl barley (not quick-cooking)
1½ Tbsp. Dried Tomato & Garlic Pesto
1½ Tbsp. Onion Onion
1 Tbsp. Garlic Garlic
½ cup green onions, thinly sliced
½ cup sour cream
2.8 oz. can French fried onions
Combine first 7 ingredients in a greased slow cooker. Cover; cook on low 3½-4½ hours. Stir in green onions and sour cream; cook for an additional 5-10 minutes. Top with French fried onions. Serve with steamed California blend vegetables. Makes 6 servings.
Make ahead & freeze
Combine first 7 ingredients in a gallon resealable freezer bag. Seal well, label and freeze. Thaw and prepare as directed above.

2 cups reduced sodium chicken broth
1 packet Roasted Garlic & Herb Cheese Ball Mix
1 Tbsp. avocado or vegetable oil
1¾ lbs. boneless skinless chicken thighs, cubed
1 Tbsp.  Sea Salt & Herb Seasoning (not ground)
1 cup white rice
16 oz. pkg. frozen cut broccoli
4 oz. cream cheese, cubed
