Fall Meal Solutions #30…Tuscan Ham & Bean Soup with Kale

Don’t let the Kale scare you off…I took this recipe and made my own…did not have ham so used chicken and no one would eat this if I added the Kale so I just added extra veggies…used petite diced tomatoes instead of crushed and made it with Veggie Broth instead of Chicken Broth…had Great Northern Beans in the cupboard so used that…LOL…this was great but as you can see I changed it and made it “our way”…Enjoy!

Tuscan Ham & Bean Soup with Kale

15 oz. can crushed tomatoes
14.5 oz. can reduced sodium chicken broth
1 packet Tuscan Chicken Slow Cooker Sauce Mix (order at http://www.SimplyKimberS@msn.com)
1 lb. ham, cut into 1-inch cubes
2 (15 oz.) cans cannellini beans, rinsed and drained
16 oz. bag frozen mixed vegetables
4 cups chopped kale

Combine tomatoes, chicken broth and Tuscan Chicken Slow-Cooker Sauce Mix in a 4-quart or larger slow cooker. Stir in remaining ingredients. Cook on low 4-5 hours.

2 lbs. ground beef
1 Tbsp. Onion Onion™ Seasoning (order at http://www.SimplyKimberS.com)
1 large egg
½ cup toasted plain bread crumbs
1½ Tbsp. Pizzeria Seasoning (order at http://www.SimplyKimberS.com)
8 oz. can tomato sauce
2 cups shredded mozzarella cheese
