Fall Meal Solutions #27…Hickory Smoked Bacon Meatloaf

This was so so delicious….funny story…my adult (30something) daughter let me know she does not like meatloaf when we talked about was was for dinner…I asked if she like hamburger patties and sure enough the answer was yes…so we compromised …she ate all of hers…too funny!!  I used pre-cooked bacon crumbles and did not add any ketchup…

Hickory Smoked Bacon Meatloaf
2 lbs. ground meatloaf mixture (beef and pork)
½ lb. bacon, chopped
1½ cups shredded Cheddar cheese
½ cup panko bread crumbs
1 large egg, beaten
1 Tbsp. Onion Onion™ Seasoning (order at http://www.SimplyKimberS.com)
1 packet Hickory-Smoked Bacon Sauce Mix , divided (order at http://www.SimplyKimberS.com)
½ cup ketchup
Preheat oven to 375°. Combine meatloaf mixture, bacon, cheese, bread crumbs, egg, Onion Onion™ Seasoning and 2 Tbsp. Hickory-Smoked Bacon Sauce Mix in a large bowl. Gently mix just to combine. Press mixture into a greased 9 x 5-inch loaf pan. Bake 1 hour or until internal temperature reaches 160°. Combine remaining Hickory-Smoked Bacon Sauce Mix with ketchup. Spread over top of meatloaf; continue baking 5-10 minutes. Makes 8 servings.
