I made some pasta and added diced tomatoes and parmesan cheese while it was hot and served the meatballs on top…easy and so good!
1½ lbs. lean ground beef
½ medium onion, finely chopped (I used our Onion Onion)
3 Tbsp. Dijon mustard
2 tsp. Ultimate Steak Seasoning (order at http://www.SimplyKimberS.com)
1½ Tbsp. Rustic Herb Seasoning (order at http://www.SimplyKimberS.com)
Serve it tonight: Preheat oven to 375°. Combine ingredients in a large bowl. Gently roll mixture into 20 balls and place in greased muffin pans. Bake 20-25 minutes. Salt and pepper to taste.
Freeze it for later: Combine ingredients in a gallon resealable freezer bag. Gently roll mixture into 20 balls; place each in a paper muffin liner. Place liners in a gallon resealable freezer bag, separating layers with wax paper. Seal well, label and freeze. Thaw completely. Bake, in a muffin pan, as directed above.
Serve with spaghetti squash and a garden salad.
