Day 17 of 28…Seasonal Favorites…Honey Mustard Chicken Thighs

  • There’s nothing better than honey and mustard sauce to make a great tasting chicken 

  • 8-12 boneless, skinless chicken thighs
  • ½ cup Dijon mustard
  • ½ cup honey
  • Salt and pepper to taste, optional
  • Combine all ingredients in a gallon resealable freezer bag. Thaw completely. Preheat oven to 375°. Place in greased 9 x 13 baking pan; bake 50 minutes or until chicken reaches 165°. Makes about 6 servings. Tip: This recipe could also be make in your crockpot – cook on low 5-6 hours or until tender

  • 1 cup sour cream plus extra for garnish
  • 1 can cream of chicken soup
  • 28 oz. can crushed tomatoes
  • 10 oz. can red enchilada sauce
  • 7 flour tortillas
  • 1 can refried beans
  • 3 cups shredded cheeses
  • Fresh cilantro for garnish
  • Chopped green onions for garnish
