so we do not have peppers so I just made this and ate it with chips…would also be amazing as a tortilla stuffing…
Corn, Black Bean Stuffed Peppers Recipe
Brown ground beef with Seasoned Salt or Everyday Grillin’ Seasoning; drain. Stir in next 3 ingredients. Wash peppers, cut off tops and seed**. Place peppers in a greased casserole dish. Fill each pepper with meat mixture. Cover; bake at 350° for 25 minutes. Remove from oven, sprinkle with Cheddar cheese; continue baking, uncovered, for 5 minutes or until cheese melts. Serve with prepared corn bread. Makes 5-6 servings. *or Everyday Grillin’ Seasoning **For more tender peppers, cook seeded peppers in boiling water for 5-10 minutes before stuffing.
