this was a great meal for this beautiful day when I wanted to be outside working in the yard but we still have to eat right…loved this!! No peppers for us so I added a somed canned petite diced tomatoes…my hubby is not a fan of turkey so we used chicken …I used corn tortillas and slightly fried them in garlic infused oil and some pink peppercorn seasoning…I will never have them any other way from now on…AMAZING!
Slow Cooker Mama Mia Turkey Recipe
- 1½ lbs. turkey tenderloin
- 14.5 oz. can chicken broth
- 1 cup frozen corn (or 7-8 oz. can corn)
- ½ cup diced red pepper
- ½ cup uncooked Minute® rice
Combine ingredients in a gallon resealable freezer bag; squish to mix ingredients. Seal well, label and freeze.
When ready to prepare, thaw completely. In a greased slow cooker, combine all ingredients. Cook on low 4-5 hours. Remove turkey from slow cooker and slice. Serve on top of the rice and vegetables.
Serving Suggestion: serve in a tortilla or by itself.
Tip: If you want your sauce thicker, combine 2 Tbsp. corn starch and 2 Tbsp. water in a small bowl. Pour small amounts into slow cooker and stir until you reach the desired thickness you prefer.
