Day 24 of 28…bold buffalo steak sandwiches (or Buffalo Chicken Pasta Recipe)

hubby cannot do peppers so we picked this pasta instead

Buffalo Chicken Pasta Recipe

Skip wing night and stay in with this easy buffalo chicken pasta! 

ingredients

  • 1 pkt. Creamy Buffalo Dip Mix (www.SimplyKimberS,com)
  • 8 oz. cream cheese
  • 1 cup milk
  • 12 oz. penne pasta
  • 1 lb. chicken breast
  • 1 cup celery
  • Cherry tomatoes (optional)
  • Blue cheese (optional)

Mix buffalo dip with cream cheese; place in refrigerator. Boil water to cook pasta. 

While waiting for water to boil, dice celery and chicken into thin slices. Place together in a pan and cook until chicken is not longer pink, about 5-10 minutes. Boil noodles as directed. Once chicken mixture is done cooking, drain off any excess liquid. Add in cream cheese mixture and milk. Heat through. 

Pour sauce over prepared pasta. Garnish with halved cherry tomatoes and blue cheese if desired. Serve immediately. 

  

  

Buffalo Cheese Steak Sandwiches Recipe

  • 1½ lbs. beef sirloin tip steak
  • 14.5 oz. can beef broth, divided
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 6 slices Monterey Jack cheese
  • 6 brat buns or small hoagie rolls, split

  • Serve it tonight: Place beef, 1 cup broth and dip mix in a greased slow cooker. Cook on low 5-6 hours or until beef is tender and pulls apart easily. Preheat oven to 350°. Remove meat from broth; set aside. Meanwhile, in a large skillet, saute peppers and onions over medium-high heat until soft, about 3-4 minutes. Divide beef and pepper mixture evenly among buns. Place a slice of cheese on each; wrap each sandwich in foil. Heat in oven for 10 minutes. Strain reserved broth; serve on the side for dipping. makes 6 servings. 

    Serve it later: Place beef, 1 cup broth and dip mix in a large resealable freezer bag. Place raw onions and peppers in a smaller resealable freezer bag, and place leftover broth in another small resealable bag. Tuck all three bags into a larger bag or tape together; freeze. Thaw completely. Cook as directed above. 

    Tip: For extra zip, spread horseradish mayonnaise on the buns.

    Suggested sides: coleslaw and potato chips
