Santa Fe Chip Casserole
This entree with a southwest flair is a breeze to prepare and on the table in less than 30 minutes.

2 lbs. lean ground beef
1 packet Santa Fe Warm Dip Mix , divided (www.SimplyKimberS.com)
2 (10.75 oz.) cans condensed Cheddar cheese soup
4 oz. can diced green chilies (optional)
10.25 oz. pkg. corn chips
½ cup water
2 cups shredded Colby Jack cheese
Preheat oven to 375°. Brown ground beef in a large skillet; drain. Add 1 Tbsp. dip mix; stir in soup and chilies, if desired. Layer meat mixture and corn chips in an ungreased 9 x 13 baking dish. In a small bowl, combine remaining dip mix with water; drizzle over chips. Top with cheese. Bake, uncovered, 10-13 minutes or until heated through. Makes 6 servings.
