This was AMAZINGLY…love the flavor and how quick is was to make…
Rustic Herb Seasoning is the stand-out in this recipe – it pairs well with chicken and tomatoes…I cubed the chicken into bite size pieces and sauté them…and I dumped the tomatoes and juice all in…it was perfect!
Rustic Herb Chicken and Tomatoes

ingredients
14 oz. pkg. instant brown rice
2 Tbsp. Rustic Herb Seasoning , divided (www.SimplyKimberS.com)
1½ lbs. boneless, skinless chicken breasts, cut in half
2 Tbsp. olive oil
14.5 oz. can petite diced tomatoes with garlic and onions, drained with juice reserved
8 oz. cream cheese, cubed

Cook rice according to package directions. Meanwhile, sprinkle 1 Tbsp. Rustic Herb Seasoning over chicken. Heat oil in skillet over medium heat. Saute chicken about 5 minutes per side; remove from skillet. Add tomatoes, cream cheese and remaining seasoning to skillet; stir until cream cheese melts, adding reserved tomato juice if mixture becomes too thick. Reduce heat to low; simmer, covered about 5-10 minutes. Serve chicken over hot rice; spoon sauce over the top. Makes 6 servings.

4 oz. can diced green chilies (optional)

½ cup water
2 cups shredded Colby Jack cheese
