Day 1 of 28…EveryDay Delicious…Santa Fe Grande Burritos

So apparently we used all our sour cream so I used cream cheese…these were very good! I used tomatoes with no chilies and did not use spicy chili beans but just chili beans…my hubby was able to just add some hot sauce and we both enjoyed these! Oh and I added a little of the cream cheese mixture to the inside of the tortillas before I added the other ingredients…like a wrap but cooked…

Santa Fe Grande Burritos

1 packet Santa Fe Warm Dip Mix , divided (order at
1 cup sour cream
10 oz. can diced tomatoes with green chilies, drained
1 lb. ground beef
16 oz. can spicy chili beans, undrained
6 (10-inch) flour tortillas
2 cups shredded Mexican-blend cheese

Preheat oven to 375°. Stir 2 tsp. dip mix into sour cream; refrigerate until ready to serve. Combine remaining dip mix with tomatoes; set aside. In large skillet, brown ground beef; drain. Stir in chili beans. Using a a greased 15 x 10 pan or rimmed baking sheet, place 3 tortillas, overlapping, in a row lengthwise. Spoon half the ground beef mixture and ¼ cup tomato mixture down the center; sprinkle with heaping ½ cup of cheese. Roll to create one large burrito, and place seam side down. Repeat with the 3 remaining tortillas; roll to form another large burrito. Top both with remaining tomatoes and cheese. Bake 15 minutes until heated through. Cut into slices before serving. Makes 6 servings.

Suggested sides: Chips and seasoned sour cream

Make your own chips from the leftover tortillas; spray both sides of tortillas with oil and cut into triangles, bake for 5 minutes.

4 green onions, thinly sliced
1 cup shredded carrots
2 Tbsp. olive oil
6 hamburger buns
6 lettuce leaves
1 tomato, sliced
