Day 29 of 30…Potato Bean Soup

Wahoo…I added 1 cubed chicken breast and used my potato masher to mashed the potatoes…worked GREAT!
2 medium carrots, shredded
1/2 cup chopped celery
1 tablespoon butter (I used Garlic Infused Oil)
4 cups chicken or vegetable broth
3 medium potatoes, peeled and cubed
1 T garlic garlic (order yours at
1 T spinach and herb seasoning (order yours at
1 can (15-1/2 ounces) great northern beans, rinsed and drained
4-1/2 teaspoons all-purpose flour
3/4 cup sour cream
Pepper to taste

1. In a large saucepan cook and stir carrots, celery, and garlic garlic in hot margarine or butter (or Garlic infused Oil) over medium heat for 4 minutes or until tender. Carefully stir in chicken broth, potatoes, and spinach and herb. Bring to boiling. Reduce heat and simmer, covered, for 20 to 25 minutes or until potatoes are tender. With the back of a spoon, lightly mash about half of the potatoes in the broth. Stir the beans into the potato mixture.
2. In a small mixing bowl stir together the sour cream or yogurt, flour, pepper, and, if desired, salt; stir into potato mixture. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Makes 4 to 6 main-dish servings.

2 (15 oz.) cans Great Northern or cannellini beans
3 cups chicken brothv
1 cup sour cream
