After lots of turkey and ham we were looking for something different and this hit the spot!! Definitely not your run of the mill Tuna casserole…

Asiago Alfredo Tuna Casserole

A delicious spin on tuna casserole makes this the perfect main dish.
Ready in: 43 minutes
Prep time: 20 minutes
Chill/Cook time: 23 minutes

ingredients
1 lb. rotelle or penne pasta
4 Tbsp. Dried Tomato & Garlic Pesto Mix (order at http://www.SimplyKimberS.com)
4 Tbsp. water
3 Tbsp. olive oil
8 oz. cream cheese, softened
1 packet Asiago Alfredo Warm Dip Mix (order at http://www.SimplyKimberS.com)
11 oz. pkg. tuna, drain if necessary
2 cups half and half
½ cup grated Parmesan cheese

directions
Preheat oven to 400°. Cook pasta according to directions, drain well. Combine pesto with the water and olive oil. Microwave on high for 1 minute and let stand 5 minutes. In large bowl combine the cream cheese and Asiago Alfredo Warm Dip Mix; microwave until warmed and easy to blend. Add the pesto, pasta, tuna and half and half; stir well. Pour into a 2½ quart baking dish and sprinkle with Parmesan cheese. Bake 20-23 minutes until cheese is melted and casserole is hot.

Note: Lighten it up: use light cream cheese and milk instead of regular cream cheese and half & half.

1 cup breadcrumbs
7 slices bacon
¼ cup pure maple syrup (use when cooking)
