Day 15 of 30…Chicken Tortilla Soup

We love rice in our soup so I added 1/2 cup white rice and cooked for 20 minutes covered

Chicken Tortilla Soup
Serve this quick, flavorful soup with warm corn bread or tortillas for a complete meal.
Ready in: 35 minutes
Prep time: 15 minutes
Chill/Cook time: 20 minutes

ingredients
1/2 cup Corn, Black Bean Salsa
1 tsp. Garlic Garlic™
1 tsp. Fiesta Party Dip Mix™ (too spicy for me so I just left out)
14.5 oz. can diced tomatoes, undrained
3 1/2 cups chicken broth
1 1/2 cups cooked, shredded chicken
Shredded Cheddar cheese
Crushed Blue Aztec Chips
Garnish with lime

directions
Stir first 5 ingredients in saucepan over medium heat until it starts to boil. (Add rice) Reduce heat; simmer for 5 minutes. (20 minutes for rice…let set covered for 5 to 10 minues) Add chicken and stir until heated through, 2-3 minutes. Garnish each bowl of soup with shredded Cheddar cheese and crushed Blue Aztec Chips. Lime wedge on plate. Makes 4-6 servings

Bountiful Beer Bread Mix®
15 oz. can creamed corn
1/3 cup oil

directions
Preheat oven to 375°. Combine ingredients; pour into greased loaf pan. Bake for 50-55 minutes. Makes 14 servings…I cooked in 8×8 for 35 minutes

28oz bag frozen tater tots
1/3 cup Roasted Garlic Infused Oil or olive oil
1 tsp pepper
1 tbls paprika
2 cups fiesta blend/mexican shredded cheese
1 cup diced green onion
2 pkgs kielbasa, sliced
1 1/2 tsp salt
2 tbls Garlic Garlic™
2 tbls hot sauce (optional)
1 cup bacon, cooked and chopped
1 cup sour cream (optional after cooking)
